I always thought vegan pancakes would include random things like Flaxseed Eggs, bananas, vegan protein powder, etc.
But I found this great recipe that is a super basic vegan pancake recipe with things you have in your cupboard already!
These aren’t overly healthy, but when you’re eating a plant based diet 99% of the time, a treat once in a while can be had!
1 1/4 Cups Plain Flour
2 Tablespoons White Sugar
2 Teaspoons Baking Powder
1/2 Teaspoon Salt
1 1/4 Cups Water
1 Tablespoon Oil (I used coconut oil)
- Sift dry ingredients into a mixing bowl. Make a well and add wet ingredients. Stir just until blendy, but make sure there aren’t any lumps of flour!
- Heat a lightly oiled frypan over medium heat. Pour batter in small circle shapes and cook until bubbles form and the edges are dry. Flip, and cook until browned on the other side. Repeat with remaining batter.
Best teamed with chopped strawberries, figs and a slather of Maple Syrup!
